St Catharine’s Apprentice Chef Trains at The Ritz

From the 7th August until the 4th September, St Catharine’s Apprentice Chef Courtney Edgeley undertook a training program at The Ritz in London.

Courtney, who has been with the College since October 2016 and was inspired to cook by her grandmother, was encouraged to take part in the program by our Catering Director Robert Jonas. Speaking of the opportunity Robert said “I am a firm believer in the apprenticeship system. We have the opportunity to mould and develop chefs in a College environment and hopefully give them a better understanding of the industry. This will give them a huge array of options if and when they decide to move on.”

During her time at The Ritz, Courtney spent two weeks in the main kitchen, followed by two weeks working on the hotel’s legendary afternoon tea. When asked which area of work she preferred, it was impossible to choose. But Courtney told us that the most valuable things to come from the experience were the knowledge of how to make a dish special and most crucially of all, confidence in her work. We’re delighted to have her applying her new skills back at the College, alongside the rest of our fantastic catering team.
